Potato Salad
Ingredients required for 10 servings
(250g each)
or 20 servings
(125g each)
• 1700g Potatoes (approximately 12 medium potatoes)
• 250g Mayonnaise
• 250g Yogurt
• 280g Spring onion/Spanish onion
• Salt Pepper (optional)
Per Serving

• 170g Potatoes
• 25g Mayonnaise
• 25g Yogurt
• 30g Spring onion/Spanish onion
• Salt Pepper (optional)
Peel the potatoes, boil until cooked and leave to go cold. Cut potatoes into chunks and add the diced onion.
Meanwhile mix together the yogurt and mayonnaise and add this to the potatoes and onions, making sure that all the potatoes are coated. Season with salt and pepper if desired.
