Roasted Fruit with Yogurt


Ingredients required for 10 servings
(approximately 150-180g each).
• 1kg Any seasonal fruit (apples, pears, bananas, peaches, nectarines, pineapple, figs, plums)
• 1kg FreshYo yogurt
• 30g Castor sugar
• 100g Icing sugar
• 1 teaspoon Vanilla extract (essence) or to taste

Per Serving
(approximately 150-180g)
• 100g Any seasonal fruit (apples, pears, bananas, peaches, nectarines, pineapple, figs, plums)
• 100g FreshYo yogurt
• 1 teaspoon Castor sugar
• 10g Icing sugar
• Vanilla extract (essence) to taste

Cut the fruit into bite size pieces and place on a baking tray, sift the icing sugar over the fruit and place in a moderate oven for 20-40 minutes until soft and caramelized (time depends on the size of chunks and the fruit you are using).

Mix the sugar and vanilla essence into the yogurt and leave to stand so that the sugar has dissolved. Alternatively you can make a whole batch of sweetened yogurt.

Let the fruit cool slightly then place the fruit in a serving dish and pour over the vanilla yogurt.

VARIATION
Try mixing a teaspoon of cinnamon into the icing sugar.
