Spicy Potato Salad
Ingredients required for 10 servings
(250g each)
or 20 servings
(125g each).
• 10 medium (1300g) waxy potatoes
• 2.5 green apple, finely sliced
• 7-8 tablespoons (115g) sultanas
• 7-8 tablespoons (75g) coarsely chopped walnuts
• 300g FreshYo yogurt
• 300g mayonnaise
• 5 tablespoon (50-60g) fruit chutney
• ½ teaspoon garam masala
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• Salt and pepper to taste
• 4 tablespoon chopped parsley to garnish
Per Serving
(approximately 250g)
• 1 medium (130g) waxy potatoes
• ¼ green apple, finely sliced
• ½ tablespoons sultanas
• ½ tablespoons coarsely chopped walnuts
• 30g FreshYo yogurt
• 30g mayonnaise
• ¼ - ½ tablespoon fruit chutney
• Garam masala, ground cumin and ground coriander to taste
• Salt and pepper to taste
• ¼ - ½ tablespoon chopped parsley to garnish
Peel the potatoes and cook, whole, until just tender. Drain and cut into thick chunks.
In a large salad bowl combine the cooked potato, apple, sultanas and walnuts.
In a separate container mix together the yogurt, mayonnaise, chutney and spices.
Add the dressing to the potato mixture and gently fold through. Season to taste. Garnish with parsley or chives.
