Summer Berry Fool
Ingredients required for 10 servings
(190g each).
• 380g Raspberries
• 380g Strawberries
• 380g Blueberries
• 380g Ready made Custard
• 380g FreshYo Yogurt
• Sugar (optional)
Per Serving
(190-200g)
• 40g Raspberries
• 40g Strawberries
• 40g Blueberries
• 40g Ready made Custard
• 40g FreshYo Yogurt
• Sugar (optional)
Place 2/3 of each of the fruits in a blender; reserve the remainder. Add the custard and blend until smooth. Place in a bowl, add yogurt and stir until mixed.
Layer the fool with the reserved fruits in dishes or serving pots, finishing with a few berries. Chill for 20 minutes before serving.
VARIATION
You can use frozen summer berries as an alternative or any seasonal fruit.
Try stewed rhubarb or stewed apple and drizzle with toffee topping!
